Sourdough with Cream Cheese and Walnuts filling

I have always loved the taste of homemade bread and we can have it with butter, cream cheese, jam, avocado.. eggs.. all the various condiments. But at the same time I wanted to try fancy breads, breads with fillings.

The other day I found leftover cream cheese in my fridge and a lot of walnuts that I bought to make fruit cake at Christmas. Also, in my memory was this article where I vaguely remember someone making a cheese and walnut bun for her family. So that's how this happened. Let's get started.

Recipe (standard sourdough):

150g bread flour
100ml water
50g sourdough starter (active / refreshed)
pinch of salt

cream cheese ~80g
walnuts a handful

1. Prepare the bread dough as per normal. Mix the bread flour and sourdough, adding in water gradually and don't forget the salt. Knead for 15 minutes until the dough is smooth and bouncy.

2. Leave the dough to rise for 3-4 hours, until doubled in size.

3. Knead the dough gently. If you have worked with instant yeast dough before, you will notice that it is not as easy to knock out air from a sourdough 'dough'.

4. Try to spread out the dough with your fingers, or use a rolling pin. Scatter the cream cheese and walnuts all over. You may want to break the walnuts into smaller pieces, as you like. Then roll the dough, not unlike a cinnamon bun. Using your fingers, try to 'tack' down one side of the bun so it doesn't open up. 5. Leave the dough to rest, "seam-side" down on a well-dusted (with flour) tea towel, for about 2 hours. Transfer the dough to a baking tray lined with baking paper. At this point, if your tea towel is well dusted with flour, the bread will not stick to the towel.



6. Preheat oven to 200 deg C and bake for 25-30 minutes. You can brush the top of the bun with some water to have a crispier top. Or butter, for more fragrance.


After leaving it to cool, it's time to eat!
